So it was my Queens birthday last weekend and on the Friday night I made a romantic meal for us. This is my pièce de résistance. They say a good meal is only as good as its ingredients but come on. They also need (ahem) the midas touch. Now I would have taken a picture of this but I was drinking red wine whilst making it so it slipped my mind but trust me. This dish is delicious !!

Here’s how to make beautiful

Duck breast with chilli broccoli & rosemary & thyme roast potatoes.

Ingredients

  • 1 Broccoli head
  • 2 Duck breasts with skin left on
  • Olive oil
  • 2 Garlic cloves, roughly chopped
  • 1 fresh red chilli, sliced
  • 200ml white wine
  • 6-8 New potatoes
  • Salt & pepper
  • Rosemary & thyme

Method

Preheat the oven to 200°C.

Roughly chop the potatoes and add to a deep baking tray with olive oil, garlic, salt, pepper & the rosemary and thyme and mix up with your hands. Pop the tray into the oven. This will be ready more or less when the rest of the meal is ready.

Now, prepare the broccoli by peeling the central stalk and dividing the whole into florets -make sure you keep the stalks attached. Put them into a pan and part boil, drain and let cool.

Take the duck breasts and score the skin with a sharp knife, Season with the salt and pepper on the flesh side. Sear the breasts in a frying pan with the olive oil. Skin side down first and turn them when the skin is brown (this only takes a couple of minutes). Reserving the pan juices place the breasts into a baking tray and pop into the oven. 7 minutes, not one minute longer! The duck will be nice and pink this way.

Heat some oil in another pan and add the garlic and chilli and cook for a minute until the garlic is just coloured. Toss the broccoli florets in the pan and mix it up for a bit finishing off the broccoli.

To make a sauce for the duck, warm the reserved duck juices over medium heat. Add the white wine and simmer for a short while until reduced.

Serve the duck with the broccoli and drizzle with the sauce.
